not sure about the requirements because don’t have a fixed goal yet, just wondering where to search and with what to compare…
It’s hard to recommend anything because “open source server” is just a bunch of nouns.
If you can explain more about the product you’re trying to build or the problem you’re trying to solve, maybe we can offer you some concrete suggestions.

Seriously, a basic net/http package serveMux is a server that’s part of the standard library. Without knowing what you want it to do you’re going to be hard pressed to sort through whats available. As Dave has said, scope your goals and you’ll have a better idea of what you need.
